Oven-fried potatoes
Want a better "French-fry"?  Don't fry it.
Instead try this method of  making "oven-fries"

Preheat oven to 350 degrees.
Coat cookie sheet with canola oil non-stick cooking spray.
Peel and cut into strips (french-fry shapes):
1 large or 2 medium potatoes per serving.
Lightly salt all sides of potatoes, arrange on cookie sheet.
For slightly oily "fries" coat very lightly with cooking spray,
for drier "fries" do not spray.
For breaded "fries" coat lightly with flour.
Salt and pepper to taste or sprinkle with your favorite herb or
seasoning.
Bake in 350 degree oven 35-45 minutes until potatoes are
golden-brown and soft when forked.
Potatoes can be sliced and prepared as above to produce
oven baked, lower-fat "home-fries".
