Sheia's Vegi Chili
Ingredients
1 large can (27 oz.) pinto beans, rinsed
1 can (15 oz.) black beans, rinsed
1 can (14 oz.) diced tomatoes
2 large fresh tomatoes, diced
1 cup corn kernels
1 1/2cup crumbled veggie burger*
1/2 cup diced onion
4 tbsp. olive oil
2 tsp. chili powder
chopped chili peppers (Optional)

Preparation
In large saucepan heat olive oil on medium heat.
Add onions, peppers (if desired) and crumbled burger.
Sauté for 3-4 minutes then add fresh tomatoes,
simmer for 3-4 more minutes.
Add canned tomatoes, pinto beans, black beans and
corn.
Heat to boiling, reduce heat to medium low and
simmer for 30-40 minutes.
Serve over your favorite noodles prepared according
to instructions on package.
