No Meat Loaf
This is our universal meat substitute. Prepared and
cooked it can be used in a great variety of dishes.
Ingredients:
1 cup TVP®* (Textured Vegetable Protein)®*
1 cup water
2 medium stalks celery, split & chopped
1small or 1/2 large onion, chopped small
1/2 green pepper, chopped
1/2 cup bread crumbs
2 eggs
1/2 cup tofu, chopped very small
1/2 cup ketchup (more or less as desired)
Garlic salt, herb seasonings to taste
Preparation:
Mix TVP® and water in bowl, let stand while you;
chop celery, onions, green pepper and tofu.
Add eggs, bread crumbs and tofu to TVP® mix.
Then add the chopped vegetables and ketchup.
Mix by hand to blend all ingredients to a consistency
like ground meat, careful not to add too much
ketchup. (Mix should hold its shape when formed into
a loaf 2-3 inches thick.  If mix is too loose add more
bread crumbs to firm up mix. Add seasonings (about
1/2 tsp garlic salt and a few dashes herb seasoning.
(or substitute your favorite herbs or spices)
Blend seasonings well into mix and form into loaf
on lightly oiled cookie sheet.
Bake in 350 degree oven for 45 minutes. (Slightly
more for firmer, drier texture but do not overcook.
Loaf will dry somewhat as it cools.
Serve like meatloaf with potatoes and vegetable dishes
or use after refrigeration for great "no meatloaf"
sandwiches.  Add barbecue sauce for a picnic delight.
