| Ingredients 2 to 3 cups cooked long-grain rice (Try Mahatma Brand "Long Grain & Wild Rice Mix") ½ cup firm tofu, chopped small ½ medium onion, chopped small 2-3 medium stalks celery, split & chopped 1 cup chopped cabbage ½ bell pepper, chopped small (Optional) ½ cup raisins, chopped ½ cup pineapple chunks, cut small ½ - 1 cup frozen green peas ½ cup walnuts or pecans, chopped small ½ cup sun dried tomatoes (or cut-up grape tomatoes) (Optional) Olive oil Tamari or soy sauce to taste Mrs. Dash ™ seasoning, to taste |
Preparation Boil rice according to package instructions In large skillet or wok, cover bottom with olive oil and sauté on medium heat, diced tofu, onion, cabbage, celery, and bell pepper until vegetables are cooked. Chop or mince raisins add to mixture. Cut pineapple chunks to smaller pieces and add to mixture. Chop nuts and add to mixture. Add frozen peas and tomatoes. Stir mixture well and add olive oil if needed to prevent scorching or sticking to bottom of pan. Season lightly with Tamari or soy sauce and Mrs. Dash ™. Continue cooking, stirring occasionally, until all ingredients are cooked to taste. Add cooked rice to mixture, stir well adding additional seasoning, Tamari or soy sauce to taste. Serves 4-6 people with some left over for a treat tomorrow. Everyone raves about this dish. |
